The granite slopes of the Simonsberg mountain are known within South Africa as Cabernet country for a good reason. Cabernet has grown here for over 300 years and produces classic, elegant examples of the varietal. Aromas of cassis and Moroccan mint underlined by robust tannins and a long finish.
From Latin, so passes the glory of the world. This wine is grown, selected, sorted, crushed, fermented, matured, and bottled in respect of natural processes. Only 2341 bottles were made.
This Syrah shows umami in spades: a velvety structure with fine tannins, black pepper, and olive purée. A small percentage of Mourvèdre and Viognier round out the grape’s floral aromas & earthy notes.
Part of Noble Hill used to be called Southern Cross farm, and the winery marks this chapter in its history with a special carbonic-macerated, naturally-fermented wine named after the the Crux (Southern Cross) constellation.
