Lonely Heart, we called on Kilpsun Vineyard, one of Washington’s finest sites for cabernet sauvignon. Planted in 1989, the cabernet sauvignon from Klipsun Vineyard provides texture, power, and an unmistakable character. The support of Obelisco Vineyard cabernet sauvignon adds intense richness, depth and layers of dark fruits. When working with fruit of such extraordinary quality, we strive to elevate and support its inherent greatness without dominating the profile with heavy-handed winemaking techniques. Our goal is to allow the amazing fruit quality and finished wines to speak for themselves. Specific oak cooperage is thoughtfully selected to draw out the innate beauty and power in the wine without overwhelming the aromas and flavors. Great care is taken in the cellar to delicately handle the must, which is never pumped and is punched down twice a day to create gentle extraction. Once fermentation is complete, the wine is lightly pressed to barrel where it will age for 21 months in 88% new French oak.
A wine that wasn’t made in 2013, as they didn’t feel they had the quality, the 2014 Old Vines Cabernet Sauvignon is a classic, old school, Washington state Cabernet that gives up big, rich notes of dark fruits, chocolate, truffle and licorice. This full-bodied, concentrated 2014 has notable tannic grip, a big mid-palate and a great finish. It will evolve nicely for 4-5 years than drink nicely for more than 10-15 years.
