Elegant rich, yet mellow flavors that linger comfortably on the palate. This Junmai Ginjo is specially brewed to be enjoyed on long Autumn nights. We brew this Sake with the freshest harvest rice during the coldest winter days. It is then left in the tank to mature slowly until next Autumn and shipped without the usual 2nd pasteurization process, this is where the name, “Hiya Oroshi” or “cold shipping”, comes from. This is done to allow this Sake to maintain the superb flavor gained from the long slow maturation period.
Year aged Ginjo Nama Genshu is a rich, dense sake that is absolutely delicious. These dynamite 200ml cans pack a punch since the sake is 19% alcohol.
This special sake is from the super popular Kikusui Brewery in Niigata. This sake is milled to a tiny 23% and is brewed with an ultra premium Koshihikari rice.
Funaguchi is an un-pasteurized and un-diluted type of Sake and as such it is surprisingly delicate. The most damaging elements to the quality of a Sake are the light, heat and the air. So in order to deliver the unique taste of freshly brewed Sake, KIKUSUI had to revise its brewing techniques. In order to protect this delicate Sake from the damaging light rays we decided to use aluminum can to completely block out the light. Then we filled the normally 180ml cans right to the top, to 200ml, to reduce the amount of air that could come into contact with the Sake. This way we could protect this delicate type of Sake allowing more people to enjoy the flavor of pure Sake previously only available to those lucky enough to visit the
Kikusui Perfect Snow – The king of Nigori Sake. From the birthplace, Japan’s top Nigori Sake (unfiltered sake) brewer, Kikusui. Now available in the US. Perfect Snow is a white, cloudy sake reminiscent of pure snow, with a crisp, dynamic flavor despite its sweet, full-bodied palate.
Funaguchi is a truly fresh sake which is not subjected to either pasteurization or blending. Since the draft sake is delicate, we had to solve various problems before we could commercialize it. With our technology developed through the tradition and the enthusiasm for brewing, we strenuously solved each problem, and after trial and error, we were at last able to commercialize the draft sake in 1972. Funaguchi has an alcohol content of 19% which is slightly higher compared with the average sake. Being rich yet light in taste, Funaguchi presents slightly different mature tastes as it deepens its maturation in a can, fresh our of the brewery, six months later, and one year later. Since it was placed in the market in convenient aluminum cans, Funaguchi has been constantly popular and it now has many fans throughout Japan.
