“Mas La Chevalière” is literally the “farmhouse of the knight’s lady,” the name of the Laroche property in southern France. Their rosé is supple, smooth and broad, offering flavors of cherry, blueberry, and redberry fruits. It's nice and lively in the mouth with a nervy backbone of acidity, but the finish is as smooth as oyster pearls—which is fitting because it also pairs incredibly well with oysters.
Crisp, tantalizing acidity laced with elegant notes of apple, pear, melon rind and zesty lemon peel. Parcels of Chardonnay were gently pressed for a light and sophisticated texture with peak freshness producing structured wines with minimal intervention.
Planted on steep slopes of 640 to 771 feet with an eastern to southeastern exposure, the vines enjoy morning to early afternoon sun. Vaudevey is planted on Kimmeridgian limestone with a very rocky topsoil providing good drainage and aeration. The limestone-clay soil contains a multitude of tiny fossilized oyster shells. This unique soil structure delineates the premier and grand cru areas of Chablis, imparting a finesse to the Chardonnay that is precise, elegant and exceptional. The wine is bright gold in color. Hints of minerality layer citrus notes of lemon peel. Nervy, racy and lively.
Chablis—Vaillons 1er Cru; Domaine Laroche owns 2.17 hectares (5.34 acres) of the 104.26 hectares (311.57 acres) in the Vaillons premier cru appellation. Les Vaillons is a well-favored site with an elevation of 180 to 200 meters (590 to 656 feet), a generous southeastern exposure and well-drained soil. During sunny vintages, the grapes attain perfect ripeness in this premier cru vineyard and produce wines with bright fruit flavors.
A wine that reveals the limestone and the singularity of the terroirs of Chablis. Dress, pale yellow, limpid and brilliant. The nose opens on notes of chalks, flowers white and fresh fruits like the apple. Fermentation partly in old oak (30 years) brings subtle and complex notes of fresh undergrowth and of cedar. Minerality with a long and saline finish.
