This Rosé was blended from 5 different parcels of Pinot Noir from our estate vineyard in Mendocino County. Nearly 20 different lots were picked and fermented separately with only the best combination of the lots making it into the final blend. Our Tous Ensemble Rosé of Pinot Noir exudes aromatics of pink grapefruit, strawberries, white peach and freshly plucked rose petals. With a subtle hue of pale salmon, this rosé produces notes of melon, fresh cherries, lychee and anise. Fermented and aged entirely in stainless steel tanks, this wine demonstrates freshness and a long, mouthwatering finish.
Light golden yellow in color, with floral aromatics of honeysuckle, jasmine, white blossom, pineapple mint, and notes of Meyer lemon, verbena, mandarin and tangerine, pink lady apple. The palate has a pleasing texture in the mouth, with lively acid that hits up front and is followed behind by Fuji apple and Asian pear flavors.
The “Tous Ensemble” Pinot Noir, our first offering from Sonoma Coast, presents aromas of rose petals, Santa Rosa plum skins, and fresh raspberries. Ripe cherries and orange peels also present themselves on the palate with a silky texture and lingering finish.
Tous Ensemble (French for all together) is Copains appellation series wine and entry point Syrah. It gives a broader picture look at Copain's Yorkville Highlands Syrah. A modern interpretation of a St.-Joseph or Crozes-Hermitage, the wine boasts pretty aromatics, supple tannins, exceptional balance. This is Syrah crafted for Pinot drinkers and where we truly see the deft hand of restraint and balance the is central to all Copain wines.
