Although used primarily by foodies in preparing fine cuisine, Marsala as a beverage can also be an enjoyable aperitif. Imported from Italy, Columbo Marsala is the preferred choice of chefs of one of the biggest full service, well-known dining restaurant chains in the U.S.
Marsala is a fortified wine made by blending three different types of grapes that grow natively in Sicily: Grillo, Inzolia and Catarratto. The grapes are mixed during fermentation, which is halted by the addition of high-proof spirits. This base wine is called ”Mistella”, which in Colombo's case is then aged for 8 months in barrel followed by 4 months in bottle before release.
