The 2016 Sauvignon Blanc is a youthful wine with fine acidity and length. Our focus is on clean varietal flavors, fresh fruit and richness on the palate. We grow Sauvignon Blanc on Bridge Pa Triangle Vineyard, deep Red gravel soils allowing for good drainage and ripening. Intensive canopy management provides us with a good balance between varietal herbaceous notes as well as ripe, tropical characters.
Chill Wine Co Merlot is a prime example of the style produced from the stony, gravel soils of Hawkes Bay. The vines are managed with an open canopy to provide good airflow and exposure to sunlight and are all single cordon spur pruned. All fruit is sorted with Paritua’s state of the art optical sorting machine and destemmed to closed fermenters. Cold soaking takes place before ferment and fermentation are approximately 10 days with regular pump-overs to optimize the extraction of color, flavor, and tannin.
