Cascina Fontana Barolo is produced from Nebbiolo grapes grown on steep hill vineyards in the heart of the Barolo wine zone, notably on our own three select cru vineyards, Villero and Valletti in the wine commune of Castiglione Falleto and Gallinotto in the commune of La Morra. Grapes from each site contribute different characteristics: complexity, structure, elegance, acidity, fruit. Following in the tradition of Le Langhe, the grapes from each site are harvested and vinified separately. Once the fermentation is complete, the wines are assembled then aged for two years in 25hl botte – large casks made from Slavonian oak. After this period, the wines then undergo further ageing for a year in stainless steel vat followed by at least a minimum of a year in bottle before release.
