Delicate and unique, our 2019 Rosé shines out of the bottle like a coral colored jewel. Sustainably grown in Monterey County, our grapes are carefully harvested under the cool moonlight and only the best bunches are selected for our 100% Cinsault French-style rosé. Two days of skin contact provide this wine with flavors of tart strawberry, rhubarb and dried apricot, with a crisp, dry, watermelon rind finish.
At Bianchi, we use Méthod Charmat, the Italian Method, to make our popular, everyday California Sparkling wine because of the uniquely clean, pungent fruitiness that evolves from the process. Our choice in using primarily Colombard grapes adds the distinctive fruit-forward flavors of peach, tangerine, and tropical fruit which are balanced by tiny pleasant bubbles and an off-dry finish. Tucked into the Salinas Valley in Monterey County, our Sauvignon Blanc grapes benefit from one of the coolest and longest growing seasons in California. Greater “hangtime” on the vines for the grapes means exceptional results with wines that boast intense fruit flavors and full expressions of the varietal. Our 2018 Sauvignon Blanc is a shining example of quality of fruit from this region, and the passion and skills of our own winemaker in Paso Robles. Beautiful aromas of honeysuckle and grapefruit zest give way to loads of zesty citrus flavors, passionfruit and a touch of honeydew melon. Cool, maritime fog and ocean breezes from Monterey coupled with the moderately sunny climate in the Edna Valley, laden with rich, organic and volcanic soils all contribute to this elegant and balanced wine. Harvested by hand, these grapes are coupled with a delicate Burgundian yeast strain to help bring out the fruit-forward style in this soft, summery wine. Expect flavors of honey, sweet pear, nectarines and toasted almonds to entice you to have another sip.
This rich and vibrant 2018 vintage of our Santa Barbara Chardonnay is loaded with flavors of stone fruit and cream. With the help of cool, ocean breezes from the pacific, and a watchful eye from the careful growers of the Los Alamos valley, pristine quality grapes are hand-harvested and brought back to our winery where our winemaker takes the reins. French oak barrels (50% virgin oak,) contribute luxurious notes of buttered popcorn, lemon meringue pie and a warm, spiced vanilla finish.
While Cabernet Sauvignon has become one of the flagship varietals of Paso Robles, the terroir in this area is so varied, that no two Cabs are exactly alike. Our 100% Cabernet Sauvignon is grown on our 40 acre estate in the Geneseo District, making it truly unique to Bianchi. The hot weather and more granular soils on the East side produce a deep and well structured Cabernet Sauvignon. Our 2017 vintage does not disappoint with enchanting scents of eucalyptus and dark chocolate leading into big, bold flavors of overripe blackberries, plum and cocoa wrapped up with a dark, velvety mouthfeel.
Our smallest production wine is one of our most beloved. With only 350 cases produced per year, our estate grown Merlot is a special prize to take home each season. Harvesting these grapes by hand at just the right time of day is imperative to achieving proper acid and sugar levels, and our staff has developed a very careful eye for it. 22 months in French Oak lends this wine hints of baking spices and sweet mocha that complement the ripe black cherry and raspberry notes already present.
Luscious fruit and berry preserves pave the way for this 2018 Paso Robles Zinfandel. Blueberries, blackberries and red licorice excite the nose, and prepare the palate for similar tasting notes. Black cherries, overripe raspberries and deep black currant are dominant, but couple nicely with secondary flavors of fig, black pepper and clove. Enjoy this wine on the porch while watching the sun go down, or with friends, grilling smoked meats and other foods rich in flavor and spice.
