Porfidio – The Auscal (Y2009)

Unsurprisingly, the best ‘Agave Australis’ only grows in the Australia Outback. That’s the raw material used to make this extraordinary and exquisite Australian agave spirit. So, think Auscal, not Mezcal! Beyond the obvious, Porfidio’s Auscal is a singular, single-agave, single-origin, single-vintage, single-cask vegan agave craft spirit. Differently to Mezcal, Auscal applies the Galenical Method to extract the best from the Agave. After distillation, this agave spirit is then aged for 3 years in Australian whisky casks until burgeoning to its sublime maturity. From seedling to bottle, it took 14 years to make this bottle.
