XO means “extra old” and this denomination is used for the best distillates, on condition that they are aged in wooden barrels for at least six years, when the maturation reaches its maximum quality. The Grappa XO Sibona ages for more than six years in small French oak barrels in the acient distillery’s cellar. The final product is a blend obtained from the fermented residue of renown varietal grapes such as Nebbiolo (Barolo and Barbaresco) and Barbera from Langhe and Roero. Its warm and complex flavour, with a strong and innovative character, is intended for true connoisseurs.
