Our 100% Bruto maguey is close to home growing near Cotija, Michoacán where the Chavez family called home for generations. A massive agave growing around twenty years before being ready for harvest. Once we harvest, these agave are roasted in earthen pits for 168 hours, then rested for 288 hours before crushing by hand with mallets and axes and fermenting in pinewood tinas for 192 hours. Once fermentation is complete, we double distill in our copper caso and pinewood stills and bottle at proof.
