Sweet, aromatic “heart” cherries with dark fruit flesh are stoned before crushing, and only 10 to 15% of the stones are returned to the mash. This serves to produce a cherry schnapps of consummate character: it possesses a great deal of fruit and a only small amount of stone taste, and features a delicately nuanced fragrance with a delicious trace of marzipan. A clear, fruity schnapps with a pleasant touch of almond.
