We rest our White Rum in used bourbon barrels from other local distilleries for several months to pick up color, weight, and a fair amount of vanillin. Once we empty the barrel, we infuse the rum with a small amount of Sweet Woodruff, a soft green herb that contributes a delicate aroma of vanilla, hay, and tea.
