Though produced in Oregon, Clear Creek "Eau de Vie de Pomme" Apple Brandy is comparable to a fine Calvados. Distiller Stephen McCarthy starts with Golden Delicious apples, and then in keeping with Normandy tradition, ages the spirit in limousin oak Cognac barrels for at least eight years. The spirit retains the fresh, bright character of the apple, but develops maturity and complexity from the oak. This is a complex, entrancing spirit that will please the Calvados and Cognac enthusiast alike.
