For this bottling we worked with all Pacific Northwest Apples. They were carefully crushed and fermented before entering a small Holstein still. There they were distilled before clarifying the cider, preserving the fresh apple flavor. The distillate rested for 2 years in used French Oak before spending an additional year in new American Bourbon Barrels to lend a sweetness to the nose and finish.
