Here in New Hampshire, black trumpet mushrooms and wild blueberries are harvested at the same time, so we used both to create our latest cordial concoction. A unique blend of the season’s best sweet and savory flavors, our Black Trumpet Blueberry Cordial is made with hand-picked blueberries from the forest near our distillery, and foraged black trumpet mushrooms from our neighbors at New Hampshire Mushroom Company. Mushrooms are an unexpected choice — this is the only spirit we know of that uses them — but the rich, fruity, smoky flavor of the black trumpet provides a perfect counterbalance to the sweet, tart blueberries. Lavender and lemon verbena straight from our garden add light herbal notes and reinforce the fresh flavors, creating a rare cordial that brings to mind a prize-winning blueberry pie.
Hops have long been the darling of the beer world, and it is from the dry-hopping process in particular we drew the inspiration for our Wild Hop Gin. Cold distilling, like dry-hopping, emphasizes the floral attributes of fresh hops, rather than the bitterness that is brought out by boiling. We selected five varieties (Citra, Amarillo, Centennial, and Columbus, along with a NH heirloom vine we hand harvested locally) to infuse and distill using our rotovap process, then added structure to the gin with coriander, angelica, lemon, and ginger. Like a classic New England IPA, this gin showcases the aromatic qualities of hops, with fruity and tropical notes fortified with piney juniper and floral, spicy coriander. Sip straight for a crisp, dry flavor, or taste the botanicals brought to life in a gin & tonic.
