One summer afternoon, in a moment of clarity fueled by a pint of locally brewed Captain Lawrence beer, our master distiller asked himself a question; “Beer is made from grain, whiskey is made from grain...what if we made whiskey from beer made by a brewery?” When we brought the idea to Captain Lawrence’s owner, Scott Vacarro, he sent us thousands of gallons of his Freshchester Pale Ale to distill into whiskey and so 287 Single Malt Whiskey was born. Named after the highway that connects StilltheOne Distillery and the Captain Lawrence Brewery, 287 Single Malt Whiskey is carefully distilled to capture the nuance of the malted barley and then matured in new oak barrels. Limited Edition. A Spirit Like No Other. 287 Single Malt Whiskey began it’s journey from beer to whiskey in December of 2013. The first batch of 287 Single Malt Whiskey is in limited production, with only the First Taste edition bottles released after a 10 month aging time. Each bottle is filled and labeled by hand, with our master distiller’s signature on every single one.
Back in February 2011, Ed Tiedge, a former Marine and the master distiller at StilltheOne Distillery, was busy putting the finishing touches on another run of Comb 9 Gin when his phone rang. On the line was a volunteer from the Wounded Warrior Project, asking him to donate some of his gin for an auction to benefit wounded soldiers. Ed agreed without hesitation, before realizing he could do a whole lot better. Rather than just donate a few bottles of the gin he had on hand, Ed turned back to his copper pot still and got to work on an entirely new gin that would serve as a tribute to the injured troops. When he had finished, he was left with a case of twelve bottles of new gin: Comb Jarhead Gin, named as a nod to the Marines, with whom he so proudly served.
The history of gin is quite a long one. From a cheap drink adulterated with sugar to make it palatable, to a refined product that became a favorite of officers of the Royal Navy, gin is the original flavored vodka. Thankfully, modern gin’s sophisticated aromas and flavors have led to a resurgence of its use in cocktails. Our honey spirit, with it’s floral orange blossom notes, is a perfect fit as a base for the flavor and aroma palate of gin.
