After solera blending in Bourbon barrels, Port Wine casks and Spanish Sherry casks, the Papa's Pilar Dark rum has been placed back in Bourbon barrels for an extended period of time, creating a flavor profile that highlights the unique characteristics of both rum and bourbon.

By building off the strong base flavors found in our dark rum and allowing additional time for the blended rums to meld together, this special release has developed a slight sweetness combined with a uniquely spicy finish, resulting in a smoothness and complexity second to none. Ernest Hemingway was this type of man – an adventurer who lived life to the fullest. He indulged us with glimpses of a vibrant life by stitching together distant cultures, passions, and people using the power of the written word. Inspired by his appetite for adventure, we’ve proudly created a super-premium rum: Papa's Pilar. It is a spirit born of multiple rums hand-selected from the Caribbean, Central America and Florida. The rums are then brought to the U.S.A. and married together in our unique Solera aging and blending process. Papa’s Pilar Dark and Blonde rums are crafted to reflect Hemingway’s passions on both land and sea. If the shape looks familiar, that’s because it’s styled after the aluminum canteens carried by US infantryman for most of the 20th Century. The bottle pays homage to Hemingway’s duty as an ambulance driver in Italy during World War I and his exposure to the Normandy landings in World War II. Why the chain? US infantry canteens used a chain to tether the screw cap to the bottle. The cap could be left slightly loose on the march - allowing drops of water to slosh out and soak the canvas covering. Evaporation kept the contents cool. Last but not least, etched into Pilar’s bottle cap is a compass - the simple yet indispensable tool that provides comfort and direction to adventurers on land and sea. The compass on Pilar Dark's cap has the African Sun logo in its center, signifying Hemingway's adventures on land.
