The fruit is harvested at the time of its maximum fragrance and distilled with Athanor, our double boiler still installed in the year 2000 according to the instructions of the “Liber de Arte Destillandi” of Hieronimus Brunschwyg, published in Strasbourg in May 1500.
Poli Grappa Torchio d'Oro depicts on the label a ‘rossolo’ (a braid of bunches of grape let to dry) to represent the only nine wineries that produce Torcolato di Breganze wine and that all decided to give their Torcolato marc exclusively to the Poli Distillerie.
“Sarpa” in Venetian dialect means “grape-pomace”, the raw material from which Grappa is made. Sarpa di Poli is obtained from the pomace of grape varieties with floral and delicately herbaceous aromas, distilled by means of steam in a pot-still working in small batches.
