A straight vodka made with Demeter-certified biodynamic chambourcin grapes grown at Jack Rabbit Hill Farm and Gunnison River Farms, 6 miles down the road on the Gunnison River. The whole grapes are fermented spontaneously (no yeast added) and distilled twice and redistilled with certified organic Romanian winter wheat distillate. Research suggests that native yeasts-which form and exist naturally on healthy, clean grapes-produce higher concentrations of glycerol during fermentation than artificial fermentations. This may explain CapRock®’s rich mouthfeel and clean finish. Also, the grapes are fermented and distilled whole, including skins and seeds, contributing soft fruit tannins to the texture.
A blend of 12 different fruits, flowers, seeds, and spices infused in a base spirit made with certified organic Jonathan apples grown 5 miles down the road at Ela Family Farms and certified organic Romanian winter wheat distillate. Whole fresh and dried botanicals (never extracts or concentrates) are distilled all together in the final run, using the London method, slowly and under low steam pressure, to produce layers of clean, fresh aromas and flavors.
Biodynamic® Chardonnay and Reisling Grappas Distilled from estate grown pomaces, pressed to 1 bar, and fermented in closed vats. Gentle pressing ensures the pomace has plenty of juice for fermentation. No water or sugar is ever added to the pomace. Slow, cool ferments produce bright, spicy fruit. Rich and concentrated. Biodynamic® Pinot Noir Grappa Distilled from estate grown pomace, pressed to 1.5 bars. Rich, round mouthfeel with plenty of spice from super-ripe skins and seeds. Organic Rosa Senza Spine Grappa “A rose without thorns”, is made just like the Pinot grappa with 1 extra step. We redistill with a sprinkle of star anise and pink rose buds, just enough to give the distillate a very subtle infusion of sweet spice.
