As traditional distillers of cult-status agave spirits, we chose cacti and succulents from the desert as our thematic botanicals for this singular barrel-aged gin. Our spectrum of aromatic elements contains: 1. fresh juniper berries; 2. agave flowers; 3. tuna cactus flowers; and 4. pitaya cactus flowers. These four fractionally distilled elements are then suffused together with unfermented agave stem juice, the Fifth Element, and aged for 5 years in virgin Castanea Sativa barrels, adding the Sixth Element to our Opus Magnum. Gorgeous on the palate, full-bodied, with a layered, elegant mouthfeel.
Porfidio is a single-agave, single-origin, single-terroir, single-vintage, single-varietal, single-barrel, first-growth agave craft spirit that is made from cold pressed, raw agave juice, instead of cooked agave, the normal method for tequila. Porfidio is then aged in virgin oak barrels until burgeoning to its sublime maturity status of an Anejo-Extra. From seedling to bottle, it took 15 years to make this bottle. The Y2007 Vintage ranks as one of the finest Porfidio bottlings. Despite not being classified as a Tequila, Porfidio is considered the ultimate expression in the art of tequila making.
