Raspberry double aged in oak barrels for one year with Jalapeños. Trois Dames is using some Brettanomyces strains and Saison yeast, fermented in a foudre.
Elder sister of our Fraîcheur, it is too strong to be drank during the day. hence “La Fraîcheur du Soir”, or the evening cool. A double wheat beer, brewed with about twice the amount of grain used for its little sister. It contains pilsner malt, unmalted wheat and oats grown at the foot of the Jura mountains. Cilantro, bitter orange peel, Magnum, Tettnager and Spalter Selects hops are added too. Then it is fermented with a Belgian witbier yeast, and bottle conditioned, unfiltered and unpast- eurized. By nature a full-bodied beer, with a lovely initial sweet edge, and a soft fruitiness. A sharp touch, citrus and spicy notes lead to a moderate final bitterness. La Fraîcheur du Soir will appeal to both casual drinkers looking for an easy to drink yet tasty beer and seasoned beer buffs looking for intensity and complexity
