For our 22 ounce IPA brews, we play around a bit. We brew the same malt profile each time, but experiment with different hops. Kind of like research for beer aficionados - a noble study of hop flavor and aroma. Willamette is a mid alpha hop bred decades ago from Fuggles. We like it for its woody or grassy tones and a smooth bitterness. Some say its too mild for West Coast IPA, but we find it quite drinkable.
In the past era, hard working rural Saisonniers consumed 5 liters per day of this style beer. We re-created it for today’s modern worker using Belgian yeasts and sour mashing for a refreshing spiceness and acidity to enliven your palate. Bottle conditioning leaves some sediment, so decant by slowly pouring into a wide mouth glass. Refill this bottle at your favorite local brewery.
