Countless supernatural creatures are said to lurk in the shadows of South Louisiana’s bayous and swamps. The Loup-Garou, Madame Grand Doigt, Tataille, Le Feu Follet and the Cauchemar have terrified Cajuns around these parts for centuries. Yet the most alarming of all these beasts may the Swamp Thing, the legendary bog-dwelling hybrid of hop plants and the Venus flytrap. Extremely hoppy, bitter beers can be brewed with its flowers, but consider yourself warned: The last man sent to harvest these potent blossoms hasn’t been seen since.Our Swamp Thing is a hoppy, citrusy and hazy IPA made with only the finest Pilsner malt and a blend of hops that include Mosaic, Citra, and Chinook. It’s fermented with an ale yeast that allows these flavors to shine- but you best leave it to us to collect the magic ingredients for this beast of a brew. As folks around here know, you sure can get lost in the Louisiana bayou.
Using Belgian malts and American hops and yeast, LA-31 Bière Pâle is a distinct new style of beer. Traditionally brewed, we classify it as a Bière Pâle, or Louisiana Pale Ale. It is bronze colored with a biscuity malt center, herbal hop flavors and a gentle, mellow bitterness. This beer is crafted to enhance the unique cuisine and lifestyle of South Louisiana. Available year round.
Brewing and tweaking five gallon test batches on the antiquated propane rig our brewery uses for weekend crawfish boils for inspiration, our brewmaster Gar Hatcher has crafted a biere to complement the spicy epitome of Cajun cuisine. Saison D’Écrevisses (Crawfish Season) is a Belgian-style Saison spiked with a generous amount of rye malt and then fermented with a distinctive Belgian yeast that gives this beer its dry and peppery finish. Finished with imported French Aramis hops, Saison D’Écrevisses has 24 IBUs and is 6% ABV. Our Saison D’Écrevisses is available in 22 oz. Belgian-style bottles and on draft only during Louisiana’s traditional crawfish season (January to June).
