This wine was a new addition to our range of biodynamic wines. In the past the Syrah was blended together with Cabernet Sauvignon, Merlot and Cabernet Franc to make up the Cornerstone blend. We felt that the wine has such subtle and beautiful spice, pepper and perfumed aromas which were lost once blended with Cabernet Sauvignon, that we decided to keep the wine and bottle it separately as a Syrah. No added enzymes, yeasts or bacteria were used in the making of this wine. 50% of the grapes underwent a submerged cap fermentation without a single pumpover and or punch down during the fermentation process. The remaining 50% of the grapes were fermented on broken whole clusters with added stems. The wine spent 14 month in used French.
