ABOUT THE PRODUCER In 1988, Dany and Michel Rolland were asked to be consultants to one of the oldest families in the valley of Calchaquie, the Etcharts. There they discovered Cafayate, a true paradise for viticulture in the north-west of Argentina. They fell in love with the country, its culture, traditions and its people. It was a ‘coup de coeur’! Cafayate is an extremely beautiful region situated several hundred kilometers to the south of the Tropic of Capricorn, at 6560 feet altitude with a very distinctive climate of hot days and cool nights. The name is highly unusual - and very un-French! Translating literally to ”clear water” in the Quechua language, it references the precious river adjacent to the vineyard. ABOUT THE WINE Grown at 6700 feet above sea level. Grapes come from vineyard that is more than 90 years old. Wine Type: Red Wine Varietal: 85% Malbec 15% Cab Sauvignon Origin: Argentina | Appellation: Finca Yacochuya, Valles Calchaquíes, Salta, Argentina Elaboration: Harvested by hand in small picking boxes in the morning at low temperatures. Carefully selected on sorting belt and fermented for 10 days, then left on its skin for 4 weeks. Conservation: 12 months in 50% new and 50% second use barrels. Bottled May, 2013. Unfined and unfiltered. Winemaker: Marcos Etchart (Cafayate, Salta, Argentina) & Michel Rolland (Pomerol, Bordeaux, France) TASTING NOTES An inviting nose of smoke, tar, licorice, soy, black cherry, and black currant. This leads to a full-bodied wine with layers of succulent fruit, excellent depth and concentration, and a lengthy, pure finish. TECHNICAL DATA Production: 5500 cases | Alcohol: 15.7% | TA: 5.66g/l | Residual Sugar: 2.93g/l | pH: 3.80
