Domaine Notre Dame des Pallières is a very old family estate, whose name comes from a place of pilgrimage visited by the Provencal people in the Middle Age and due to protect them from the « bad fevers » (the plague).The old vines goes deep in the chalky-clayey subsoil and profit by the little Trignon valley microclimate. The grapes are harvested by hand and crafted according traditional winemaking methods.The classic cuvee (80% Grenache, 15% Mourvèdre), matured in vats for 3 to 4 years, then bottled, expresses the delicacy and depth of the greatest Gigondas. The maturation in French oak barrels during 8 to 12 months as soon as the malo-lactic fermentation is undergone adds to the « new barrel » cuvee (75% Grenache, 15 % Mourvedre) toasted and vanilla aromas, resulting in a complex and charming wine.
