This wine is dry and fruity with a clear and limpid character. The taste of red fruit dominates. On the palate, it has a long, lingering finish. The Castel des Maures rosé is a perfect complement to octopus salad with olive oil and balsamic vinegar, as well as to red mullet, sea bream, or grilled tagliatelle Bolognese. It is also enjoyable as an aperitif. The vinification combines traditional and modern techniques: stripping, pressing, and cool-steeping of the grapes, followed by bleeding of the must and temperature-controlled fermentation (at 64°-68°F) to extract maximum flavor and aroma.
