Bright gold and perfectly translucent, tinged with inviting amber tones. Wonderfully rich, the effervescence forms a lovely stream of bubbles resembling fine pearls. NOSE: Fresh, light and engaging, the Champagne reveals an understated, yet splendid floral and fruity character, with aromas of herbs, dried flowers and lemon zest. On the palate, the 2006 Palmes d’Or Brut offers notes of fine honey, bees wax, dried fruits and tropical fruits with a subtle touch of toast. The Grand Cru wines dominating the blend express minerality and merge with the tropical Chardonnay from Montgueux. This Champagne has great structure and elegance, with a long and harmonious finish. Best served chilled, between 44–46ºF.
FOOD PAIRING: STARTERS: Mature Parmesan cheese. CASUAL FARE: Grilled scallops. FINE DINING: Filet of sea bass in a citrus broth.
