La-Vis Simboli Pinot Grigio has been cultivated in the Commune of Lavis, Trento for decades. Simboli Pinot Grigio forms part of a range produced by esteemed Trentino cooperative, Gruppo La-Vis, to represent the classic varieties and wine styles of the region. The vines are planted on the quite steep slopes of the valley at an altitude of 250-300 m.a.s.l. , with west to south-west exposure. The vines are trained in the traditional “pergoletta”, at an average density of 4000-4500 vines per hectare, and the average vine age is 15-20 years. The grapes are harvested during the second half of September. Following fermentation in temperature controlled stainless steel tanks, the wines remain in tank for 5 to 10 months, and in bottle a further couple of months prior to release.
